Instructions
Pickled Veggies
- In a wide-mouthed mason jar, place julienned carrots, daikon, cucumber, onion, shredded cabbage, and sliced jalapeno.
- In a small bowl, combine sugar, vinegar, water, and salt. Whisk until sugar is dissolved.
- Pour over veggies and place mason jar in the fridge. Leave for at least 1hr, but best when left for a few days.
Spicy Garlic Aioli
- In a bowl, combine egg yolk, vinegar, 1 1/2 tsp of lemon juice, mustard, and salt. Whisk all ingredients until combined and mixture is bright yellow (will take about 30-45 seconds).
- SLOWLY add 1/4 cup of oil using a 1/4 tsp while whisking constantly.
- After the 1/4 cup is incorporated, SLOWLY add the remaining 1/2 cup of oil in a slow but constant stream whisking constantly.
- Mayonnaise will become thick and lighter in color as it begins to emulsify. Will take a while ( about 8-10 minutes).
- Mix mayo with lemon juice, garlic, black pepper, and siracha. You can also add a couple dashes of liquid amino for an added umami taste
Bread
- Preheat oven or toaster oven to 250 degrees Fahrenheit.
- Place baguette on a baking sheet and warm for 5-10min (until bread is hard and crisp).
- Let bread cool before assembling sandwich (warm bread will break the mayo emulsion). Cut bread lengthwise making sure to not cut all the way through.
Assembly
- Layer bread with aioli and turkey meat. Add pickled veggies and garnish with cilantro.
