Turkey Bánh Mì Sandwich

Equipment

  • Wide-mouthed Mason Jar
  • Small Mixing Bowls
  • Baking Sheet

Ingredients
  

Pickled Veggies

  • 1 cup Carrots
  • 1 cup Daikon
  • 1/2 cup Shredded Cabbage
  • 1/2 Red Onion
  • 1 cup Cucumber
  • 1 1/2 cup White Wine Vinegar
  • 1/4 cup Sugar
  • 1/2 cup Warm Water
  • 1/2 tsp Salt
  • 1 Jalapeno more depending on desired spice level

Spicy Garlic Aioli

  • 1 Large Egg Yolk
  • 4 1/2 tsp Fresh Lemon Juice
  • 1 tsp White Wine Vinegar
  • 3/4 cup Avocado Oil or other neutral flavored oil
  • 1/2 tsp Mustard Powder can use 1/4 tsp Dijon
  • 1/2 tsp Salt
  • 3 tsp Black Pepper
  • 2 tbsp Minced Garlic
  • 1 tbsp Siracha

Bread

  • 1 Loaf of rustic crusty French baguette toasted

Filling

  • 3 cup Turkey

Instructions
 

Pickled Veggies

  • In a wide-mouthed mason jar, place julienned carrots, daikon, cucumber, onion, shredded cabbage, and sliced jalapeno.
  • In a small bowl, combine sugar, vinegar, water, and salt. Whisk until sugar is dissolved.
  • Pour over veggies and place mason jar in the fridge. Leave for at least 1hr, but best when left for a few days.

Spicy Garlic Aioli

  • In a bowl, combine egg yolk, vinegar, 1 1/2 tsp of lemon juice, mustard, and salt. Whisk all ingredients until combined and mixture is bright yellow (will take about 30-45 seconds).
  • SLOWLY add 1/4 cup of oil using a 1/4 tsp while whisking constantly.
  • After the 1/4 cup is incorporated, SLOWLY add the remaining 1/2 cup of oil in a slow but constant stream whisking constantly.
  • Mayonnaise will become thick and lighter in color as it begins to emulsify. Will take a while ( about 8-10 minutes).
  • Mix mayo with lemon juice, garlic, black pepper, and siracha. You can also add a couple dashes of liquid amino for an added umami taste

 Bread

  • Preheat oven or toaster oven to 250 degrees Fahrenheit.
  • Place baguette on a baking sheet and warm for 5-10min (until bread is hard and crisp).
  • Let bread cool before assembling sandwich (warm bread will break the mayo emulsion). Cut bread lengthwise making sure to not cut all the way through.

Assembly

  • Layer bread with aioli and turkey meat. Add pickled veggies and garnish with cilantro.

Notes

Pickled veggies will last up to 2 weeks in the fridge, keep in mind the longer it sits the softer the veggies will get and the spicier the veggies will become!
Tip: When making the aioli, it may be easier if some one adds the oil while you whisk! Aioli can also be made using a blender or food processer (if available). Store aioli in an airtight container in the fridge- can be stored in the fridge for 7-1o days.
