Ingredients
  

Baked Oatmeal

  • 2 Cups Rolled Oats
  • 1 Cup Pumpkin purée Unsweetened
  • 1 1/4 Cup Milk or Dairy Alternative
  • 2 Large Eggs
  • 1/4 Cup Maple Syrup
  • 1 Tbsp Pumpkin Pie Spice
  • 1 Tsp Baking Powder
  • 1 Tsp Baking Soda
  • 1/4 Tsp Salt
  • 1 Tsp Vanilla Extract

Greek Yogurt Frosting

  • 1 Cup Full Fat Greek Yogurt
  • 8 oz Cream Cheese
  • 2 Tbsp Maple Syrup
  • 1 Tsp Vanilla Extract

Instructions
 

Baked Oatmeal

  • Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish or similar-sized dish.
  • In a large mixing bowl, whisk together the pumpkin purée, milk or dairy alternative, eggs, maple syrup, and vanilla extract until smooth.
  • Stir in the oats, pumpkin pie spice, baking powder, baking soda, and salt. Mix until well combined.
  • Pour the mixture into the prepared baking dish and spread it evenly. Bake for 35-40 minutes, or until the top is golden and the center is set.
  • Let it cool for a few minutes before slicing into squares. Top with some Greek Yogurt Cream Cheese Frosting.

Frosting

  • In a small bowl, whisk together the Greek yogurt, cream cheese, maple syrup, and vanilla extract until smooth and creamy. For extra fall flavor, you can mix in cinnamon or pumpkin pie spice.
  • Once the Pumpkin Pie Baked Oatmeal has cooled slightly, spread or dollop the Greek yogurt frosting on top of each serving. If you prefer, you can also serve the frosting on the side for a lighter touch.

Notes

For a thicker consistency, place the frosting in the fridge for 15-20 minutes before using. This will firm it up a bit, making it easier to spread. Additionally, you can strain the yogurt by placing it in some cheese cloth over a bowl for 2 hours.
