Ingredients
  

  • 1/2 Cup Rolled Oats
  • 1/2 Cup Coconut Milk
  • 1/2 Cup Chopped Fresh Strawberries
  • 1/4 Cup Greek Yogurt
  • 1 Tsp Matcha Powder
  • 1 Tbsp Chia Seeds
  • 1 Tbsp Honey

Instructions
 

  • In a jar or container, combine the rolled oats, coconut milk, Greek yogurt, matcha powder, chia seeds, and honey. Stir until the matcha is well incorporated and the mixture is smooth.
  • Gently fold in the chopped strawberries, distributing them evenly throughout the mixture.
  • Cover and refrigerate the mixture overnight, allowing the oats and chia seeds to soak up the liquid and soften.
  • In the morning, stir the oats and top with sliced strawberries. Optionally, dust with a pinch of matcha powder for an extra touch of flavor and color.

Notes

For extra matcha flavor, you can increase the matcha to 2 Tsp. For an added punch of strawberry, use a strawberry milk as your liquid base. Make a fresh strawberry syrup and add some to your coconut milk. 
The liquid to oat ratio for over night oats is a 1:1 ratio plus 1/2 the amount of liquid in yogurt; with that ratio you can begin to play around with liquids and flavors to customize your perfect jar of oats!
