Rhubarb Lime Splash

Ingredients
Rhubarb Shrub
- .5 Lbs Rhubarb chopped
- 1/4 Cup Sugar
- 1/4 Cup White Wine Vinegar
Rhubarb Lime Splash
- 4 Oz Rhubarb Shrub
- 1 Oz Fresh Squeezed Lime Juice
- 1 Oz Honey can use maple syrup or simple syrup
- Lime Seltzer Water
Instructions
Rhubarb Shrub
- In a small saucepan, combine chopped rhubarb, vinegar, and sugar.
- Over medium heat, stir mixture until rhubarb begins to breakdown and soften.
- Bring mixture up to a boil and then reduce the heat to low and let mixture simmer for 15 minutes.
- Once the rhubarb is completely broken down, it will appear stringy and strand-like, remove mixture from heat and strain through a fine mesh strainer or cheesecloth. Let stand for about 25 minutes to ensure mixture is thoroughly strained. Avoid the temptation to compact and press the mixture to strain faster.
Rhubarb Lime Splash
- In a cocktail shaker, combine rhubarb shrub, lime juice, and honey. Fill shaker with ice and shake well. Roughly shaking for 20 seconds should ensure the drink is nicely chilled!
- Strain into glasses and top off with ice and lime seltzer. Enjoy!
