Cucumber Mint Agua Fresca

This light and invigorating drink blends the crisp coolness of cucumber with the aromatic essence of mint, and is enhanced by the nutritional boost of chia seeds. Perfect for hydrating on a hot day or as a revitalizing pick-me-up, this agua fresca is a delicious way to stay cool and energized.

Ingredients
  

  • 2 Large Cucumbers chopped and peeled
  • 1/4 Cup Fresh Mint
  • 2 Tbsp Chia Seeds
  • 4 Cups Cold Water
  • 2 Limes Juiced
  • 3 Tbsp Agave Nectar
  • Ice

Instructions
 

  • In a blender, combine chopped cucumbers, mint, lime juice, agave nectar, and cups of cold water.
  • Blend until smooth. Once blended, sieve mixture through a fine mesh strainer or cheese cloth to remove the pulp and pour into a pitcher.
  • To the pitcher, add the remaining 2 cups of cold water (or however much is needed to achieve your desired level of concentration) and the chia seeds. Mix well to ensure the chia seeds are evenly incorporated.
  • Refrigerate for a minimum of 30 minutes to allow the chia seeds to plump up and for the flavors to meld together.
  • Serve over ice, and enjoy!

Notes

Adjust the level of sweetness to your liking. You can substitute the agave nectar for honey, superfine sugar, or simple syrup.
