Cucumber Mint Agua Fresca

- 2 Large Cucumbers chopped and peeled
- 1/4 Cup Fresh Mint
- 2 Tbsp Chia Seeds
- 4 Cups Cold Water
- 2 Limes Juiced
- 3 Tbsp Agave Nectar
- Ice
Instructions
- In a blender, combine chopped cucumbers, mint, lime juice, agave nectar, and cups of cold water.
- Blend until smooth. Once blended, sieve mixture through a fine mesh strainer or cheese cloth to remove the pulp and pour into a pitcher.
- To the pitcher, add the remaining 2 cups of cold water (or however much is needed to achieve your desired level of concentration) and the chia seeds. Mix well to ensure the chia seeds are evenly incorporated.
- Refrigerate for a minimum of 30 minutes to allow the chia seeds to plump up and for the flavors to meld together.
- Serve over ice, and enjoy!
