Ingredients
- 1 whole Pineapple
- 1 cup Rice
- 1/4 cup Sugar preferably brown or unrefined sugar
- 2 sticks Cinnamon
- 4 Cloves
- 1 Star Anise
Instructions
- Wash, peel, and core pineapple. Reserve the pineapple rind for later and reserve 2 cups of cubed pineapple.
- In a large sauce pan, add the pineapple rind and cubed pineapple. Cover with enough water until peel and pineapple are fully submerged.
- On medium heat, bring the pineapple to a low boil for 30 minutes.
- As the pineapple is boiling, in a smaller sauce pan add 2 cups of water and add in the spices. Simmer spices for about 10-15 minutes.
- Strain the spices from the spiced water and set water aside.
- When the pineapple has been boiling for 20 minutes, add in the rice, sugar, and spiced water. Let boil for 10 minutes.
- After 10 minutes have elapsed, check to the rice for doneness. If rice is still hard, continue to boil until soft.
- Once rice is soft, pour mixture into a blender or food processor and blend until smooth. Strain mixture and let cool.
- Pour over ice, garnish with a pineapple slice, and enjoy!
